Blender Banana Oat Pancakes

2 cups rolled oats
1 1/3 cups milk
1 ripe banana
1/2 teaspoon salt
1 teaspoon vanilla
2 teaspoons baking powder
1 egg

Place all ingredients except egg in a blender and blend until smooth. Add egg and blend for a few seconds more. Cook on a hot skillet.

Sweet and Sour Chicken

3-4 boneless, skinless chicken breasts
salt and pepper
1 cup cornstarch
2 large eggs, beaten
1/4 cup canola oil

3/4 cup sugar
4 tablespoons ketchup
1/3 cup vinegar
1 tablespoon soy sauce
1 teaspoon garlic salt

Preheat the oven to 325 degrees F.

Heat the oil in a large skillet over medium heat. While the oil is heating, cut the chicken breasts into 1-inch pieces. Season with salt and pepper. Place the cornstarch in a gallon-sized ziploc bag. Put the chicken into the bag with the cornstarch and seal, tossing to coat the chicken. Whisk the eggs together in a shallow pie plate. Dip the cornstarch-coated chicken pieces in the egg and place them carefully in a single layer in the hot skillet. Cook for 1-2 minutes and then flip each piece over to cook on the other side until nicely golden but not all the way cooked through. Place in a single layer in a baking dish and repeat with the remaining chicken pieces.

Mix the sauce ingredients together in a medium bowl and pour over the chicken in the baking dish. Bake for one hour, turning the chicken once or twice while cooking to coat evenly with sauce. Serve over hot, steamed rice.

Apple Muffins

1/2 cup margarine


1 cup sugar
2 eggs
1 teaspoon vanilla
1 1/2 cups finely chopped apples
2 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon

Bake at 375 for 20 min. Makes 12 muffins.

Breadsticks

1 1/2 cups warm water
1 tablespoon yeast
2 tablespoons sugar
3 1/2 cups flour
1/2 teaspoon salt
3 tablespoons butter, melted (for baking sheet)

Mix all ingredients (except melted butter) in a large bowl or electric mixer and knead for three minutes. Let the dough rest for 10 minutes. Heat oven to 375 degrees. Spread melted butter onto an 11X17-inch baking sheet. Roll out the breadstick dough about 1/4 to 1/2-inch thick and cut into strips with a pizza cutter. Twist slightly if desired and place about 1/2-inch apart on the baking sheet. Sprinkle with garlic salt, herbs of choice and parmesan cheese. Cover with greased plastic wrap and let rise 30 minutes. Bake 15-20 minutes at 375 degrees until golden brown.

Poppy Seed Sesame Vinaigrette

1/4 cup apple cider vinegar
1/3 cup sugar
1 1/2 teaspoons dried onion
1/4 teaspoon Worcestershire sauce
1/4 teaspoon paprika
1/2 cup oil
1 tablespoon sesame seeds
1/2 tablespoon poppy seeds

Combine first five ingredients in a blender or food processor. Slowly drizzle in oil to emulsify. Add sesame seeds and poppy seeds and stir.

Grilled Lemon Chicken Marinade

3 tablespoons lemon juice
3 tablespoons olive oil
1/4 teaspoon garlic powder
1 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon oregano
2 large chicken breasts

Combine and let marinade for 3-4 hours before grilling.
