Sweet and Sour Chicken

¼ cup butter
½ cup chopped onion
½ green pepper, cut into bite-size pieces
½ cup sliced carrots
¾ cup ketchup
2 teaspoons salt
¼ cup brown sugar
½ teaspoon garlic powder
¼ teaspoon black pepper
2 tablespoons vinegar
1 cup pineapple juice
1 cup pineapple chunks
3 chicken breasts, cut into pieces

In medium skillet melt butter. Add onion, green pepper, and carrots. Cook for 5 minutes. Stir in all other ingredients and the pour into a baking dish. Bake covered, at 400 degrees for 45 minutes then uncover and cook for another 30 minutes. Serve over rice.
